Pinot gris (French pronunciation: [pino ɡʁi] ^ⓘ), pinot grigio (US: /ˈpiːnoʊ ˈɡriːdʒioʊ, -dʒoʊ/, UK: /ˈɡrɪdʒioʊ/), or Grauburgunder (German pronunciation: [ˈɡʁaʊbʊʁˌɡʊndɐ] ^ⓘ) is a white wine grape variety of the species Vitis vinifera. Thought to be a mutant clone of the pinot noir variety, it normally has a pinkish-gray hue, accounting for its name, but the colors can vary from blue-gray to pinkish-brown. The word pinot could have been given to it because the grapes grow in small pinecone-shaped clusters. The wines produced from this grape also vary in color from a deep golden yellow to copper and even a light shade of pink, and it is one of the more popular grapes for skin-contact wine.

Pinot gris is grown around the globe, with the "spicy" full-bodied Alsatian and lighter-bodied, more acidic Italian styles being most widely recognized. The Alsatian style, often duplicated in New World wine regions such as Marlborough, Oregon, South Africa, South Australia, Tasmania, and Washington, tend to have moderate to low acidity, higher alcohol levels, and an almost "oily" texture that contributes to the full-bodied nature of the wine. The flavors can range from ripe tropical fruit notes of melon and mango to some botrytis-influenced flavors. In Italy, pinot grigio grapes are often harvested early to retain the refreshing acidity and minimize some of the overt fruitiness of the variety, creating a more neutral flavor profile. John Adlum (April 29, 1759 – March 14, 1836) was a pioneering American viticulturalist who was the first to cultivate the Catawba grape. He is known as "the father of American viticulture" (grape-growing). He also served in the American Revolutionary War; was a well-known surveyor; was one of the first associate judges in Lycoming County, Pennsylvania; and served in the United States Army in the War of 1812. Spanish wine (Spanish: vino español or vino de España) includes red, white, and sparkling wines produced throughout the country. Located on the Iberian Peninsula, Spain has over 1.2 million hectares (3.0 million acres) planted in wine grapes, making it the most widely planted wine-producing nation, but the third largest producer of wine in the world, behind Italy and France and ahead of the United States; this is due, in part, to the very low yields and wide spacing of the old vines planted on the dry soils found in some of the Spanish wine regions. The country is second in wine exports and ninth in worldwide consumption, with Spaniards drinking, on average, 21.6 litres (5.7 US gal) per person a year. The country has an abundance of native grape varieties, with over 400 varieties planted throughout Spain, though 88 percent of the country's wine production is from only 20 grapes — including the reds Tempranillo, Bobal, Garnacha, and Monastrell; the whites Albariño, Airén, Verdejo, Palomino, and Macabeo; and the three Cava grapes Parellada, Xarel·lo, and Macabeo.

Major Spanish wine regions include the Rioja and Ribera del Duero, which are known for their Tempranillo production; Jumilla, known for its Monastrell production; Jerez de la Frontera, the home of the fortified wine Sherry; Rías Baixas in the northwest region of Galicia that is known for its white wines made from Albariño and Catalonia which includes the Cava and still wine-producing regions of the Penedès as well the Priorat region. The culture of the ancient Phoenicians was one of the first to have had a significant effect on the history of wine. Phoenicia was a civilization centered in current day Lebanon. Between 1550 BC and 300 BC, the Phoenicians developed a maritime trading culture that expanded their influence from the Levant to North Africa, the Greek Isles, Sicily, and the Iberian Peninsula. Through contact and trade, they spread not only their alphabet but also their knowledge of viticulture and winemaking, including the propagation of several ancestral varieties of the Vitis vinifera species of wine grapes.

They either introduced or encouraged the dissemination of wine knowledge to several regions that today continue to produce wine suitable for international consumption. These include modern-day Lebanon, Syria, Algeria, Tunisia, Egypt, Greece, Italy, Spain, France, and Portugal. (Full article...)

Tempranillo (also known as Ull de Llebre, Cencibel, Tinto Fino and Tinta del País in Spain, Aragonez or Tinta Roriz in Portugal, and several other synonyms elsewhere) is a black grape variety widely grown to make full-bodied red wines in its native Spain. Its name is the diminutive of the Spanish temprano ("early"), a reference to the fact that it ripens several weeks earlier than most Spanish red grapes. Tempranillo has been grown on the Iberian Peninsula since the time of Phoenician settlements. It is the main grape used in Rioja, and is often referred to as Spain's noble grape. The grape has been planted throughout the globe's wine regions.

In 2015, Tempranillo was the fourth most widely planted wine grape variety worldwide with 232,561 hectares (574,670 acres) under vine, of which 87% was in Spain where it is the most planted red grape variety. (Full article...)

Bombino bianco is a white Italian wine grape variety planted primarily along Italy's Adriatic coast line, most notably in Apulia. The vine is prone to high yields and often produces neutral flavor wines. The grape is known under many synonyms throughout Italy including Debit and Pagadebit, names which came from the grape's reputation for being a high yielding and reliable crop for vineyard owners to grow that would assure them that on each vintage they could pay off their debts.

The exact origins of the grape are unknown, with early wine texts speculating that the grape may have originated in Spain. Today most ampelographers believe that the grape is indigenous to southern Italy, with Apulia believed to be the most likely home of the grape. In the 20th century DNA profiling has shown that while Bombino bianco is closely related to Bombino nero, the grape is not color mutation but its own distinct variety. Though Bombino bianco shares many synonyms with Trebbiano Toscano (also known as Ugni blanc), the two grapes are unrelated. DNA research has also shown that Bombino bianco may be one of the parent varieties of the Impigno grape of the Ostuni DOC in Apulia and of the Moscatello Selvatico grape that is also native to the same region. Wine and food pairing is the process of pairing food dishes with wine to enhance the dining experience. In many cultures, wine has had a long history of being a staple at the dinner table and in some ways both the winemaking and culinary traditions of a region have evolved together over the years. Rather than following a set of rules, local cuisines were paired simply with local wines. The modern "art" of food pairings is a relatively recent phenomenon, fostering an industry of books and media with guidelines for pairings of particular foods and wine. In the restaurant industry, sommeliers are often present to make food pairing recommendations for the guest. The main concept behind pairings is that certain elements (such as texture and flavor) in both food and wine interact with each other, and thus finding the right combination of these elements can make the entire dining experience more enjoyable. However, taste and enjoyment are subjective and what may be a "textbook perfect" pairing for one taster could be less enjoyable to another.

While there are many books, magazines and websites with detailed guidelines on how to pair food and wine, most food and wine experts believe that the most basic element of food and wine pairing is understanding the balance between the "weight" of the food and the weight (or body) of the wine. Heavy, robust wines like Cabernet Sauvignon can overwhelm a light, delicate dish like a quiche, while light-bodied wines like Pinot Grigio would be similarly overwhelmed by a hearty stew. Beyond weight, flavors and textures can either be contrasted or complemented. From there a food and wine pairing can also take into consideration the sugar, acid, alcohol and tannins of the wine and how they can be accentuated or minimized when paired with certain types of food. Ancient Rome played a pivotal role in the history of wine. The earliest influences on the viticulture of the Italian Peninsula can be traced to ancient Greeks and the Etruscans. The rise of the Roman Empire saw both technological advances in and burgeoning awareness of winemaking, which spread to all parts of the empire. Rome's influence has had a profound effect on the histories of today's major winemaking regions in France, Germany, Italy, Portugal and Spain.

The Roman belief that wine was a daily necessity made the drink "democratic" and ubiquitous; in various qualities, it was available to slaves, peasants and aristocrats, men and women alike. To ensure the steady supply of wine to Roman soldiers and colonists, viticulture and wine production spread to every part of the empire. The economic opportunities presented by trading in wine drew merchants to do business with tribes native to Gaul and Germania, bringing Roman influences to these regions even before the arrival of the Roman military. Sherry (Spanish: Jerez [xeˈɾeθ]) is a fortified wine produced from white grapes grown around the city of Jerez de la Frontera in Andalusia, Spain. Sherry is a drink produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and fino, to darker and heavier versions that have been allowed to oxidise as they age in barrel, such as Amontillado and oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based sherries.

Under the official name of Jerez-Xérès-Sherry, it is one of Spain's wine regions, a Denominación de Origen Protegida (DOP). The word sherry is an anglicisation of Xérès (Jerez). Sherry was previously known as sack, from the Spanish saca, meaning "extraction" from the solera. In Europe, "sherry" has protected designation of origin status, and under Spanish law, all wine labelled as "sherry" must legally come from the Sherry Triangle, an area in the province of Cádiz between Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. In 1933 the Jerez denominación de origen was the first Spanish denominación to be officially recognised in this way, officially named D.O. German wine is primarily produced in the west of Germany, along the river Rhine and its tributaries, with the oldest plantations going back to the Celts and Roman eras. Approximately 60 percent of German wine is produced in the state of Rhineland-Palatinate, where 6 of the 13 regions (Anbaugebiete) for quality wine are situated. Germany has about 104,000 hectares (252,000 acres or 1,030 square kilometers) of vineyard, which is around one tenth of the vineyard surface in Spain, France or Italy. The total wine production is usually around 10 million hectoliters annually, corresponding to 1.3 billion bottles, which places Germany as the ninth-largest wine-producing country and seventh by export market share in the world. White wine accounts for almost two thirds of the total production.

As a wine country, Germany has a mixed reputation internationally, with some consumers on the export markets associating Germany with the world's most elegant and aromatically pure white wines while other see the country mainly as the source of cheap, mass-market semi-sweet wines such as Liebfraumilch. Among enthusiasts, Germany's reputation is primarily based on wines made from the Riesling grape variety, which at its best is used for aromatic, fruity and elegant white wines that range from very crisp and dry to well-balanced, sweet and of enormous aromatic concentration. While primarily a white wine country, red wine production surged in the 1990s and early 2000s, primarily fuelled by domestic demand, and the proportion of the German vineyards devoted to the cultivation of dark-skinned grape varieties has now stabilized at slightly more than a third of the total surface. Christian views on alcohol are varied. Throughout the first 1,800 years of Church history, Christians generally consumed alcoholic beverages as a common part of everyday life and used "the fruit of the vine" in their central rite—the Eucharist or Lord's Supper. They held that both the Bible and Christian tradition taught that alcohol is a gift from God that makes life more joyous, but that over-indulgence leading to drunkenness is sinful. However, the alcoholic content of ancient alcoholic beverages was significantly lower than that of modern alcoholic beverages. The low alcoholic content was due to the limitations of fermentation and the nonexistence of distillation methods in the ancient world.

In the mid-19th century, some Protestant Christians moved from a position of allowing moderate use of alcohol (sometimes called "'moderationism") to either deciding that not imbibing was wisest in the present circumstances ("abstentionism") or prohibiting all ordinary consumption of alcohol because it was believed to be a sin ("prohibitionism"). Many Protestant churches, particularly Methodists, advocated abstentionism or prohibitionism and were early leaders in the temperance movement of the 19th and 20th centuries. Today, all three positions exist in Christianity, but the original position of alcohol consumption being permissible while being moderate in its consumption, remains the most common and dominant view among Christians worldwide, in addition to the adherence by the largest bodies of Christian denominations, such as Anglicanism, Lutheranism, Roman Catholicism, and Eastern Orthodoxy. White wine is a wine that is fermented without undergoing the process of maceration, which involves prolonged contact between the juice with the grape skins, seeds, and pulp. The colour can be straw-yellow, yellow-green, or yellow-gold. It is produced by the alcoholic fermentation of the non-coloured pulp of grapes, which may have a skin of any colour. White wine has existed for at least 4,000 years.

The wide variety of white wines comes from the large number of varieties, methods of winemaking, and ratios of residual sugar. White wine is mainly from "white" grapes, which are green or yellow in colour, such as the Chardonnay, Sauvignon blanc and Riesling. New Zealand wine is produced in several of its distinct winegrowing regions. As an island country in the South Pacific Ocean, New Zealand has a largely maritime climate, although its elongated geography produces considerable regional variation from north to south. Like many other New World wines, New Zealand wine is usually produced and labelled as single varietal wines, or if blended, winemakers list the varietal components on the label. New Zealand is best known for its Marlborough Sauvignon Blanc, and more recently its dense, concentrated Pinot Noir from Marlborough, Martinborough and Central Otago.

While New Zealand wine traces its history to the early 19th century, the modern wine industry in New Zealand began in the mid-20th century and expanded rapidly in the early 21st century, growing by 17% a year from 2000 to 2020. In 2020, New Zealand produced 329 million litres (87,000,000 US gal) from 39,935 hectares (98,680 acres) of vineyard area, of which 25,160 ha (about two-thirds) is dedicated to Sauvignon Blanc. Austrian wines are mostly dry white wines (often made from the Grüner Veltliner grape), though some sweeter white wines (such as dessert wines made around the Neusiedler See) are also produced. About 30% of the wines are red, made from Blaufränkisch (also known as Lemberger, or as Kékfrankos in neighbouring Hungary), Pinot noir and locally bred varieties such as Zweigelt. Four thousand years of winemaking history counted for little after the "antifreeze scandal" of 1985, when it was revealed that some wine brokers had been adulterating their wines with diethylene glycol. The scandal destroyed the market for Austrian wine and compelled Austria to tackle low standards of bulk wine production, and reposition itself as a producer of quality wines. Vin délimité de qualité supérieure (French pronunciation: [vɛ̃ delimite də kalite sypeʁjœʁ], "delimited wine of superior quality"), usually abbreviated as VDQS, was the second highest category of French wine, below appellation d'origine contrôlée (AOC) in rank, but above vin de pays (country wine). VDQS was sometimes written as AOVDQS, with AO standing for appellation d'origine. VDQS wines were subject to restrictions on yield and vine variety, among others.

There were relatively few VDQS as they typically moved on to AOC status after a number of years. VDQS therefore represented a small part of overall French wine production. In 2005, VDQS wines made up 0.9% of volume amounting from 409,472 hectoliters of production. 42.3% of the VDQS wines produced in that year were white, with the remaining 57.7% being either red or rosé.
