Zapekanka
In East Slavic cuisine, zapekanka (Russian: запека́нка) is a casserole-like baked dish whose base constitute a pureed ingredient and a binding component. The most common type is cottage cheese zapekanka based on collage cheese and eggs.[1] Zapekanka was one of simple staple foods in the former Soviet Union. Other ingredients may be added: fruits (dried fruits), chicken pieces, etc. Other bases for zapekanka include mashed potatoes, cabbage, or cauliflower. Similar dishes include lasagna and some kinds of puding.[2]
